The pigs are also kept antibiotic-free unless required for their health, and are allowed to grow at a natural and healthy rate.\u003c\/p\u003e\n\u003cp\u003eOnce ready, the legs are carefully prepared, salted and aged for two years. The resulting prosciutto is outstanding; strong, nutty and savoury, with more subtle fruity notes developing on the pallet.\u003c\/p\u003e\n\u003cp\u003eMachine sliced prosciutto is wonderful, and indeed it is our speciality; hand carving is a different art, and we feel for some products that machine sliced is better.
