Burrata (200g)
Part of the mozzarella family, our Burrata is a soft and creamy cheese is made by the team at Querceta dairy, deep in the Apulian countryside. They have their own herd of 500 dairy cows, grazing in the surrounding pastures, with their milk being produced entirely organically.
Burrata takes the form of a pouch; the outside is formed of mozzarella, and the inside is stuffed with cream and unstretched curd (stracciatella). The finished burrata was traditionally wrapped in the leaves of the Asphodel plant, hence the design of the packaging today. Burrata comes from the Italian for 'buttered', which refers to its rich flavour.

Our purpose built facility, opened in 2018, includes an environmentally controlled curing room, cold storage and a prep kitchen. All product preparation happens here - hams are de-boned, salami sliced, and cheeses cut to order. If you order from us on-line, you will be getting exactly the same products that we sell in our Borough shop.
