Guanciale Toscana
An iconic and unique salume, guanciale is made from the jowel muscle ('guancia') of the pig and is typified by thin bands of meat between larger layers of fat. Ours is made by hand in the small town of San Miniato, Tuscany, using Suino Grigio pigs living semi-wild in the surrounding area.
Raw Guanciale are rubed with sea salt, crushed black pepper, salt, garlic and other herbs, and brushed with sangiovese red wine before curing for five to six months. The resulting product is strong and robust in flavour, with fat the melts in the mouth. We have tried guanciale from many suppliers throughout Italy but this remains the best we have found.

Our purpose built facility, opened in 2018, includes an environmentally controlled curing room, cold storage and a prep kitchen. All product preparation happens here - hams are de-boned, salami sliced, and cheeses cut to order. If you order from us on-line, you will be getting exactly the same products that we sell in our Borough shop.
