Mortadella Truffle
Our mortadella is made by Artigianquality in the centre of Bologna. They make their mortadella using choice cuts of high quality pork from locally-raised free range pigs.
The pork is minced with black truffle and simple spices including nutmeg, garlic, cumin, salt and pepper, with larger chunks of fat being added before the meat is put into a casing and strung up. The mortadella is then cooked over many hours at a temperature just high enough to ensure pasteurisation but low enough to preserve its texture and flavour. The end result is a mortadella that's deeply flavourful that manages to avoid the methods used by larger, industrial producers.

Our purpose built facility, opened in 2018, includes an environmentally controlled curing room, cold storage and a prep kitchen. All product preparation happens here - hams are de-boned, salami sliced, and cheeses cut to order. If you order from us on-line, you will be getting exactly the same products that we sell in our Borough shop.
