Prosciutto di San Daniele
San Daniele is produced in and around the town of San Daniele del Friuli, near Trieste. Compared to the 200 registered Prosciutto di Parma producers, San Daniele has only 30 – of whom we feel Prosciuttificio Prolongo are the best. Their San Daniele hams are cured for a total of 18-20 months, uniquely utilising open curing rooms to allow natural air currents to cure the hams, with their key difference compared to the more well known Prosciutto di Parma coming in the salting process:
San Daniele is salted over the same number of days as the weight of the ham – usually 14-15 days, whereas Parma is salted for up to 25 days. This results in a relatively sweeter and more moist final product, and the higher fat content in the hams used lends to a smoother texture.

Our purpose built facility, opened in 2018, includes an environmentally controlled curing room, cold storage and a prep kitchen. All product preparation happens here - hams are de-boned, salami sliced, and cheeses cut to order. If you order from us on-line, you will be getting exactly the same products that we sell in our Borough shop.
