Salami Toscano
Our Salami Toscana is made using pork from Suino Grigio ("Grey ppig") that live semi wild around the town of San Miniato. This allows the pigs to feed on a wide range of nuts, grains and grass - leading to a greater depth of flavour, higher quality fat, and better texture; all of which are vital for a good salami.
Pork shoulder and belly is ground, with chunks of lard added to the mixture, and then seasoned with sea salt, both cracked black pepper and whole peppercorns, and sangiovese red wine, before being put into casings and curing for 90 days. The resulting salami is punchy, salty and rich, with a pleasant warmth from the black pepper.

Our purpose built facility, opened in 2018, includes an environmentally controlled curing room, cold storage and a prep kitchen. All product preparation happens here - hams are de-boned, salami sliced, and cheeses cut to order. If you order from us on-line, you will be getting exactly the same products that we sell in our Borough shop.
