Caseificio Polito
We source our mozzarella from a small family business called Il Caseificio Polito, located near Agropoli in the Campania region of southern Italy and they only use their milk from their own Bufala herd.
Prolongo
We have taken San Daniele ham from the Prolongo family for many years. They run one of the oldest - and smallest - prosciutto ‘stagionatura’ in the center of San Daniele de Friule.
Galloni
We source our Parma Ham from Mirella Galloni, the queen of Parma Ham, sitting on the board of the production consortium, traveling the world, while also making top quality Parma Ham with her family.
Bre Del Gallo
We source our Culatello from Bre Del Gallo, the remarkable curing rooms at Bre Del Gallo, close to the River Po, it is hard to avoid the feeling of being on hallowed ground.
D’Osvaldo

Sergio Falaschi
