Carnaroli Rice (1kg)
Often referred to as the King of rice, Carnaroli rice is starchier, firmer, and slightly longer older brother to Arborio. Preferred in professional kitchens as it keeps its structure much better when cooking, is more resistant to over-cooking, and ultimately makes a much creamier risotto with a better texture.
Our Carnaroli is grown by Meracinque in the clay-rich soil of Rocoferrano, Lombardy. Literally meaning "Wonderful Five”, their name refers to the fact that they're owned and managed by five sisters. They refer to their approach to growing rice as the “internet of farming”, as they no chemical treatments and instead rely on technology and constant monitoring to ensure the quality of the rice.

Our purpose built facility, opened in 2018, includes an environmentally controlled curing room, cold storage and a prep kitchen. All product preparation happens here - hams are de-boned, salami sliced, and cheeses cut to order. If you order from us on-line, you will be getting exactly the same products that we sell in our Borough shop.
