


Coppa Di Zibello
Coppa is made using the muscle running from the pig's neck down to the seventh rib, and is characterised by the large amount of intramuscular fat that gives it its unique texture and flavour. The whole muscle is placed into a natural bladder and cured for six to eight months depending on the size, with the result being a product that is remarkably marbled with buttery fat, and particularly rich in flavour.
Bré del Gallo are experts in both salume production and in animal welfare, carefully selecting each pig they use.

Our purpose built facility, opened in 2018, includes an environmentally controlled curing room, cold storage and a prep kitchen. All product preparation happens here - hams are de-boned, salami sliced, and cheeses cut to order. If you order from us on-line, you will be getting exactly the same products that we sell in our Borough shop.
