Fontina Aosta
Fontina is a semi-hard, raw cow's milk cheese made throughout the Aosta valley in the western Italian alps. Ours is made by the Volger family with their own small herd of cows which grazes in the alpine pastures. They make two batches of seven wheels every day. The wheels are pressed slowly over 12 hours before aging in the Volger's natural cave for up to 100 days, during which time they are regularly turned and salted, causing the characteristic orange rind.
Similar in texture to dried mozzarella but with more depth of flavour, the paste is smooth and slightly elastic, with a buttery and nutty flavour.

Our purpose built facility, opened in 2018, includes an environmentally controlled curing room, cold storage and a prep kitchen. All product preparation happens here - hams are de-boned, salami sliced, and cheeses cut to order. If you order from us on-line, you will be getting exactly the same products that we sell in our Borough shop.
