Gorgonzola Dolce
Gorgonzola is the most famous of Italy's blue cheeses, with our Gorgonzola Dolce being a softer, creamier varient. Ours is made by Latteria di Cameri, a collective of 16 local dairies around Novara, in Lombardy. Aged for up to 75 days, Gorgonzola Dolce has a distinctive blue and white marbling.
Silky, creamy, and slightly waxy, its texture makes it particularly versatile. It is relatively sweet and buttery compared to other gorgonzolas, with a pleasantly calm blue finish that helps keep it from overpowering other flavours thanks to the use of Penicillium Glaucum moulds, instead of roqueforti, in its production.
The cheeses vary from piece to piece; for the softer/"gooier" wheels we will send them in PLA trays to keep them secure in transit.

Our purpose built facility, opened in 2018, includes an environmentally controlled curing room, cold storage and a prep kitchen. All product preparation happens here - hams are de-boned, salami sliced, and cheeses cut to order. If you order from us on-line, you will be getting exactly the same products that we sell in our Borough shop.
