Mozzarella di Bufala
Our Mozzarella di Bufala is made in the village of Agropoli, on the plain of the river Sele, the traditional heartland of mozzarella production.
Using only buffalo milk from their small herd, the Polito brothers shape each cheese by hand in a process called ‘mozzare’, which gives the cheese its name. During production, the milk curds are separated from the whey, then covered in hot water (95°C) This changes the curd, so it can then be stretched and made elastic by continuous drawing. The elasticity means that when cut, the cheese forms a rounded shape. Once formed, the mozzarella are placed into bags along with a mixture of water, salt and whey, which helps to preserve them on their journey to London.
We receive our Mozzarella every Friday morning; while it has a reasonable shelf life and can even be frozen in an emergency, there's nothing quite like the flavour and texture of fresh Mozzarella di Bufala.

Our purpose built facility, opened in 2018, includes an environmentally controlled curing room, cold storage and a prep kitchen. All product preparation happens here - hams are de-boned, salami sliced, and cheeses cut to order. If you order from us on-line, you will be getting exactly the same products that we sell in our Borough shop.
