Pancetta Tesa (200g)
Pancetta is made from pork belly - the same cut used to make streaky bacon. It's a staple of Italian cooking; a relativelely simple, "rustic" cured meat that be used in a wide variety of dishes. Ours is made in San Miniato, Tuscany, by Sergio Falaschi, using pork from locally reared free-range Suino Grigio pigs.
The pork belly is covered with a layer of crushed black pepper and garlic and cured for up to four months - relatively long compared to other pancetta - which results in a stronger flavour and tighter texture.
"Tesa" refers to the fact that the Pancetta is flat, as opposed to the alternative rolled or "Arrotolata" - which we occasionally stock.

Our purpose built facility, opened in 2018, includes an environmentally controlled curing room, cold storage and a prep kitchen. All product preparation happens here - hams are de-boned, salami sliced, and cheeses cut to order. If you order from us on-line, you will be getting exactly the same products that we sell in our Borough shop.
