What is "Italian Hard Cheese", I hear you cry. Good question. I mean, look at it - you know what it is, we just can't call it that for legal reasons - when packaged outside of Italy, we aren't legally allowed to call it what it is. "How peculiar", I hear you exclaim - we agree. 

We have chosen 30-month matured "Italian Hard Cheese", classified as 'stravecchio' or 'very old' as we feel it strikes the best balance between flavour and texture; intensely nutty, sharp and deeply rich, and avoiding the potential bitterness of younger cheeses. The extended aging allows the cheese to become slightly firmer, while retaining the crumbly quality that the cheese is known for, and also gives time for amino acids to crystalise, creating little crunchy pockets that provide a pleasant textural contrast.

From there everything is exported straight to us at Borough, arriving early on Friday. Over the years we have formed close relationships with our producers. This, combined with the short, direct supply chain, means we can be confident in the quality, provenance, and consistency of our products.

Our purpose built facility, opened in 2018, includes an environmentally controlled curing room, cold storage and a prep kitchen. All product preparation happens here - hams are de-boned, salami sliced, and cheeses cut to order. If you order from us on-line, you will be getting exactly the same products that we sell in our Borough shop.
