Pecorino Supramonte is a sheep's milk cheese with a minimum maturation of 60 days, named for the mountainous region in the east of Sardinia, and made by Seppi Formaggi, a family-owned producer in Oristano. Its texture is close to a mature English cheddar at first, if a touch waxier, though its flavour is much more unique. The sheep’s milk provides a pleasantly malty, heavy quality that develops slowly in the mouth, with vegetal and sour notes coming through.

All product preparation happens here - hams are de-boned, salami sliced, and cheeses cut to order. If you order from us on-line, you will be getting exactly the same products that we sell in our Borough shop.
