Prosciutto Cinta Senese
Cinta Senese comes from the Italian for belt, referring to the white band of colour around the pigs, and Sienna, the historic origin of the breed. Our Cinta Senese prosciutto is made from free-range heritage pigs that live semi-wild, and subsist on a diet of acorns, truffles, chestnuts, and roots. We spent time with the farmer Margerita and saw the care that she takes to keep them happy and healthy.
The prosciutto is produced b y Sergio Falaschi has close relationships with several nearby farms, talking only a small quantity of hams and curing with salt and black pepper for between 18 and 24 months to create a truly special prosciutto. The final product is characterised by a thick band of smooth and buttery fat, with a richly nutty and earthy flavour to the meat

Our purpose built facility, opened in 2018, includes an environmentally controlled curing room, cold storage and a prep kitchen. All product preparation happens here - hams are de-boned, salami sliced, and cheeses cut to order. If you order from us on-line, you will be getting exactly the same products that we sell in our Borough shop.
