



Prosciutto di Cinta Senese - Hand Carved (24 month)

"Cinta" from the Italian for belt (referring to the belt of white fur around their middle), and "Senese" as in "from siena, Cinta Senese is an iconic Tuscan rare breed of pig. Having been listed as endangered in 2007, breeders like Renieri have ben able to bring the them back from the brink. Compared to standard pork, the fat in Cinta Senese is much more marbled, and the meat itself stronger in flavour.
The breed itself is special, but so is the breeder. Renieri keep their pigs out in the tuscan countryside, rotating between different areas of pasture and forest, allow each to recover for a few months, and giving the pigs more variety in their environment. They are fed a base of grains grown in Tuscany, and then forage for nuts, roots, grass - whatever they like. The pigs are also kept antibiotic-free unless required for their health, and are allowed to grow at a natural and healthy rate.
Once ready, the legs are carefully prepared, salted and aged for two years. The resulting prosciutto is the best, the most unique that we have ever brought to London; strong, nutty and savoury, with more subtle fruity notes developing on the pallet.
Machine sliced prosciutto is wonderful, and indeed it is our speciality; hand carving is a different art, and we feel for some products that machine sliced is better. However, Cinta Senese is a unique case; the nature of the breed, in addition to the priority given to animal welfare and quality over cost and expediency, makes this prosciutto as good, if not better, when hand carved.

From there everything is exported straight to us at Borough, arriving early on Friday. Over the years we have formed close relationships with our producers. This, combined with the short, direct supply chain, means we can be confident in the quality, provenance, and consistency of our products.

Our purpose built facility, opened in 2018, includes an environmentally controlled curing room, cold storage and a prep kitchen. All product preparation happens here - hams are de-boned, salami sliced, and cheeses cut to order. If you order from us on-line, you will be getting exactly the same products that we sell in our Borough shop.
