Sigh. The joys of selling DOP products in the UK - we are not legally permitted to use the name of this product when it's packaged outside of Italy, so you'll have to work with me here. If we bought it pre-sliced then we could, but we much prefer to fresh slice it for you, so we're stuck doing this silly dance of terminology.

Think of the most famous Italian Prosciutto; it's that one. Okay, moving on...

Our Prosciutto di "Something" is made by the Galloni family in Langhirano, Emilia Romagna. The hams are pressed and salted with Sicilian sea salt over a two month period, before being coated in a mixture of rice flour, salt and fat ('sugna') which protects the meat during the curing process. 

The final product is delicate and fragrant, melting in the mouth and complimenting a wide variety of flavours. Prosciutto di "nudge, wink" is the quintessential Italian cured ham and Galloni's is widely viewed as one of the best in Italy.

From there everything is exported straight to us at Borough, arriving early on Friday. Over the years we have formed close relationships with our producers. This, combined with the short, direct supply chain, means we can be confident in the quality, provenance, and consistency of our products.

Our purpose built facility, opened in 2018, includes an environmentally controlled curing room, cold storage and a prep kitchen. All product preparation happens here - hams are de-boned, salami sliced, and cheeses cut to order. If you order from us on-line, you will be getting exactly the same products that we sell in our Borough shop.
