Quadrello di Bufala is a square-shaped soft cheese made from whole buffalo milk, produced in Lombardy. The name refers to the square shape of the whole cheeses.
The cheese is formed into blocks and matured for around two to three weeks, during which the rind is regularly washed in brine. This washing process encourages the growth of surface bacteria that break down the paste from the outside in, softening the texture and developing the cheese's distinctive earthy, savoury depth as it ripens.
In flavour it is reminiscent of a Taleggio, though not as strong and funky. It's forward with the buffalo milk flavour, which makes it an easy choice for a cheese board that needs something off the beaten track.
