The D'Osvaldo family make their Speck in the small town of Cormons, using meat from locally and sustainably reared pigs. In contrast to regular prosciutto, which is made by curing the whole leg, Italian Speck is made by deboning and then butterflying just the thigh before coating in salt, pepper and mixture of spices. The thighs are left to dry for a few days before being smoked naturally for several hours over laurel, cherry, and rosemary, then finally curing for at least six months.

The butterflying process allows the smoke to penetrate the meat much faster and results in a much stronger, richer smoky flavour. While many competitors now use artificial smoking agents, D'Osvaldo continue to prefer their artisanal approach - a decision that is reflected in the quality of their Speck.

Our purpose built facility, opened in 2018, includes an environmentally controlled curing room, cold storage and a prep kitchen. All product preparation happens here - hams are de-boned, salami sliced, and cheeses cut to order. If you order from us on-line, you will be getting exactly the same products that we sell in our Borough shop.
